Add chopped celery, red pepper, fry for another 3 mins or so, then add in sliced courgette and chopped up aubergine flesh. Stir fry until courgette is tender. Add in the ragu sauce and soya sauce, and season with black pepper and some basil to taste. Stir lentils into this mixture.Place the Aubergine shells in an oven-proof dish, fill with the mixture.
