I replaced the ground beef that it called for with veggie crumbles, and jazzed it up a bit to make it healthier, but still delicious and filling! Enjoy! What Are The Ingredients For Vegetarian Stuffed Tomatoes Recipe?The ingredients for Vegetarian Stuffed Tomatoes are: 6 medium to large tomatoes1 medium onion, chopped 3-4 cloves of garlic, minced 1 1/2 tbsp extra virgin olive oil 1pkg. veggie crumbles (I use Lightlife Smart Ground; whatever you use, it should be equivalent to 1lb. ground beef when cooked) 3/4 cup wild rice, cooked (if it's too expensive, you can easily substitute brown rice) 1 cup reduced-fat cheddar cheese, grated 2 tsp. dried basil (or 2T fresh, chopped) 1/2 tsp. salt 1/4 tsp. black pepper 1 egg How Do I Make Vegetarian Stuffed Tomatoes?Here is how you make Vegetarian Stuffed Tomatoes: 1)Preheat oven to 350 degrees. Cut tops off of tomatoes. Carefully scoop out the pulp out of each one, reserving 1 cup of pulp (you can either throw the rest out, or save it; it goes great in homemade vegetable stock!). Rest each tomato cut-side down on a couple paper towels for now.2) In a large saucepan, heat olive oil on medium to high heat. Add onion and garlic, and cook about 5 minutes, until onion is softened. Add veggie crumbles and heat through, breaking up with a wooden spoon, if necessary. Add reserved tomato pulp, basil, salt, and pepper, bring to a boil, and reduce heat to bring down to a simmer. Simmer for about 10-15 minutes, till liquid has evaporated.3) Once liquid has evaporated, remove from heat. stir in rice, cheddar cheese, and the egg, and combine well. Fill each tomato with the mixture, and place in a 2-quart greased baking dish.
