Here is how you make Tina's Vegetable Giambotta:

Dice all of the vegetables into large chunks. Heat olive oil, with onion and garlic, for a couple of minutes, add the rest of the vegetables, (except potatoes), with seasonings, salt, pepper, italian seasoning to taste. saute vegies stirring so they don't stick. Add the vegetable broth and water. Bring to a boil for one full minute, then lower flame and simmer for about 30 minutes. Add potatoes diced thin. Simmer for another 20 - 30 mins till potatoes are tender.
