Add sweet potatoes and saute until starting to wilt, if it starts to stick you can add 1/2 cup water. Stir in beans and spices. Add scant 1/2 cup of mixture to a tortilla and wrap tightly. Place seam side down into baking pan that has been sprayed with Pam. Cover with Enchilada sauce. Bale covered for 20 minutes. Remove from oven add cheese and return to oven until cheese is nicely melted. I serve over a bed of shredded lettuce and chopped fresh tomatoes.
