1 pkg frozen corn, thawed
1 pkg boca or morningstar crumbles
6 poblano peppers
1 jar salsa (choose to taste: spicy or mild)

Here is how you make Vegetarian Chiles Relleno:

Place a small amount of oil in a large skillet. Add the crumbles and cook according to package directions. Add the corn. Once the corn is warmed with the crumbles, add the three cheeses. Run the poblano peppers with a small amount of oil to aid in the removal of the blackened skin later. Place the poblano peppers on a grill or open burner on gas stove and roast. Once blackened all the way around, place the peppers in a bowl and cover with saran wrap and let "steam." Remove the blackened skin from the peppers. Once all the above is done, place the "filling" inside the peppers. Place the peppers in a baking pan. Pour the jar of salsa over the peppers. Place in 350 degree oven for 30 minutes.
