5 T soy sauce, low sodium (divided)
1 1/2 cup chicken broth
2 T cornstarch


How Do I Make Veggie Egg Foo Yung?

Here is how you make Veggie Egg Foo Yung:

1. Saute onion until tender.2. Add remaining vegetables, water chestnuts and 1 T of soy sauce. Heat through, then remove from heat and set aside.3. In a large bowl, whip egg substitute with electric mixer until foamy, about 3-5 minutes. Stir in vegetable mixture.4. Spray pan with cooking spray and heat over medium heat.5. Ladle mixture into hot pan, forming patties about 5 inches in diameter. You may need to flatten out veggies or fold in liquid that spreads.6. Fry until browned, then turn and fry on other side until browned.6. Drain patties on a paper towel and place on an oven-safe platter and keep warm in oven until ready to serve.To make sauce:1. In a small pot, mix chicken broth, remaining soy sauce and cornstarch. Heat over medium heat until sauce begins to thicken.
