This is a favorite in our household. My husband loves lasagna (he is a total meat-and-potatoes guy) but he loves this recipe. It's easy to make its mostly just the prep time of chopping. But the calories and the nutrients are worth the time! Since it is just us two; I either refrigerate or freeze left overs for later.We usually make 1- 9x13 pan and it makes a nice 6 full servings so you can eat a bigger amount and the calories are still great. Recipe?The ingredients for Veggie Lasagna (You won't miss the meat!) are: Ingredients:Pasta, Lasagna Noodles, 8 oz Zucchini, 2 cup, sliced Onions, raw, 1 cup, chopped *Summer Squash, 2 cup, sliced Portabella Mushrooms, 150 grams *Extra Virgin Olive Oil, 2 tbsp Garlic, .5 tsp Lea & Perrins, Worcestershire Sauce, 1 tsp Basil, 20 leaves Red Ripe Tomatoes, 5 cup, chopped or sliced Ricotta Cheese, part skim milk, 1 cup *Mozerrella Cheese-Part Skim 1/3Cup, 3.3 serving Spinach, frozen, .5 package (10 oz) yields Parsley, dried, 2 tbsp Granulated Sugar, 1.5 tsp Salt, .5 tsp Pepper, black, .5 tsp Egg, fresh, 1 jumbo Optional/additional Items: Chili Pepper or Red Pepper in the tomato sauce (gives a nice kick) Egg Plant (My husband doesn't like egg plant at all so I don't make it with egg plant, but it is a great veggie to add!) Wheat Lasagna Pasta (that is what I typically use) How Do I Make Veggie Lasagna (You won't miss the meat!)?Here is how you make Veggie Lasagna (You won't miss the meat!): 1. Preheat Oven to 350 and take out a large skillet; on medium heat put in EV Olive Oil.2. Rough Chop oinions, mushrooms, summer squash and zucchini, put in the skillet with EvOO. Add worcestershire sauce to cook veggies in. Cook till semi-cooked (this gets some of the water out before baking).3. Puree half of the tomatoes to get a nice base for the sauce, chop remaining half. Add basil, garlic powder/fresh, 1/2 of parsley, sugar, salt, pepper to taste. cook till it starts to simmer/low boil. Remove from heat. 4. Mix: Egg, cheeses, spinach (thawed & drained if frozen), rest of parsley. 5. spread a light layer of the tomato sauce mixture in the bottom of a 9x13 pan. Smear the lasagna noodles with about half the cheese mixture (you should fit 3 regular length and 1 partial noodle per layer). layer a nice helping of the veggie mixture next. cover with good layer of tomato sauce - Repeat for another layer. 6. the veggie mixture should bulk up the lasagna so that I usually only get 2 noodle layers in. 7. Bake for 1 hour at 350 (cover for first 30 mins with tin foil, then uncover last 30 mins to let the water cook out of the lasagna).
