1/2 tsp of dried marjoram
1/2 tsp of dried ground sage
2 TBS soy sauce
2 TBS of Dijon Mustard
1 TBS of creamy peanut butters
2 eggs (optional)

Here is how you make Not another veggie meatloaf:

Preheat Oven to 350 FSpray cooking spray on a regular sized (1/3 cup) 12-count muffin pan. In a large bowl, mix the wheat germ, oats and dried herbs.Add the rest of the veggies & give it a good mix.In a small bowl or measuring cup, blend the soy sauce, Dijon mustard and peanut butter (I know, sounds like an odd mix, but trust me).Then add the eggs and stir until well combined.Add the wet ingredients to the large bowl and stir for a couple of minutes or more. The stirring helps create the "meaty" texture. The mix should become more dense & wet.Spoon mix into muffin tin & tamp it down to be level with the top of the cup.Bake for 45 minutes or so. Let cool slightly and pop the mini- loaves out of the pan. Run a knife around the sides, if they stick a bit.I find that two of these make a decent serving, though the nutritional breakdown is for one mini-loaf.This mix is also good stuffed into blanched bell pepper halves and then baked.Number of Servings: 12Recipe submitted by SparkPeople user TMAC05819.
