Here is how you make Roasted Veggie Lasagna:

Serves 9Place 1/4 cup of tomato sauce in the bottom of a casserole dish. Layer uncooked lasagna noodles over sauce. Layer roasted veggies, ricotta, mozzarella, sauce and more noodles to evenly distribute making at least three layers of noodles. Save 1/2 to 1 cup of sauce for the top to cover the last layer of noodles. Place 1/2 of the mozzarella on top of the lasagna. Cover with lid or foil and bake in a 425 degree oven for 40 minutes until bubbly.Remove cover and bake for 10 more minutes until the top is slightly browned.
