1 15oz can of Low-Sodium Black Beans (drained and rinsed)

1 C Tuscan/Italian Kale (Remove stems and chop into thin strips)
2 C Red Cabbage, shredded
1/2 C Plain Greek Yogurt
1 Juice from 1 Lime
2 Tbsp Cilantro, chopped
1/8 tsp Chipotle Powder
Salt and Pepper to taste

Here is how you make Roasted Veggie Tacos with Creamy Lime Slaw:

Pre-heat the oven 425 degrees.Cut 1/4" off from the top and bottom of the delicata squash. Slice in quarters vertically, remove the seeds and slice into 1/2" chunks. Toss all other "Ingredients for Roasted Veggies" (except the black beans). Place on a lined baking sheet and roast for 20 min. While the veggies are roasting make the Creamy Lime Slaw. Combine the yogurt, lime juice, cilantro, chipotle powder, salt and pepper.Whisk together well. Toss the dressing with the cabbage and kale and refrigerate. Once the veggies are done (al dente) remove from the oven, toss the black beans with the veggies and set aside.Warm the tortillas, fill with the veggies and top with the creamy lime slaw.
