Here is how you make Shrimp Veggie Couscous:

Grate 1 tsp zest from orange and measure 1/3 cup juice. Add oil, onion, carrots, pistachios, cumin and cinnamon 2 quart saucepan and cook over medium heat for about 5 minutes or until onion and carrots are just softened. Add broth, orange zest, frozen peas and shrimp. Bring to a boil and remove from heat. Add couscous and let stand 5 minutes. Fluff couscous, add orange juice, mint and 1/2 tsp salt.
