Packet of Old El Paso Taco Seasoning Mix (40% Less Sodium) or preferred taco seasoning blend

Here is how you make Veggie Spiked Taco Filling:

A food processor works best for this...Shred the sweet potato (with the skin) and the onion in a food processor. Heat a non-stick skillet on high and melt coconut oil. Saute onion and potato until softened and well caramelized. Remove from pan and set aside.Using the chopping blade of your food processor, chop the mushrooms fine. Use the "pulse" function so that you chop, but do not puree the mushrooms (they will not brown if they are pureed).Add the chopped mushrooms to the hot pan and saute for several minutes until golden brown. Add ground turkey to pan and brown. Stir in potatoes and onions and packet of seasoning mix. Add a tablespoon or two of water if mixture seems too dry. Stir until combined and cook for an additional five minutes.
