This is Atkins and Low-Carb friendly, although pretty steep on fat and sodium content. You can easily adjust the cheese content and those will adjust rapidly as well. Add frozen mixed vegetables, reduce heat to medium low and then after 10 minutes, add salmon. Increase heat to medium high and cook entire contents for 10 minutes.Meanwhile, in a medium saucepan, melt butter, add sour cream, and milk. Whisk until well blended over medium heat, about 4 minutes, all-the-while stirring in the grated Parmesan. Add all spices and reduce heat to low to simmer and thicken for about 5 minutes. Reserve cheddar cheese.Once somewhat thickened, add the ingredients from the salmon and vegetable pan to the butter/Parmesan pan. Heat through about 4 minutes, then remove from heat and cover to set up for 5 minutes.While letting that set up, pre-heat oven to broil at 500 degrees. (top element only)Once heated and ready, then spoon salmon mixture into 4 oven-safe bowls and cover with 2 oz. of the cheddar cheese per bowl. Put on top shelf of oven on a cookie sheet as close to the top element as possible and broil for 5 minutes, or until cheese is bubbly and a little browned on the edges.
