Preheat oven to 400 degrees FLay 4 good sized pieces of tin foil out (large enough to contain the fish when folded).Place 1/4 cup fresh spinach on each of the pieces of foil.Place the haddock fillets on top of the spinach and sprinkle with salt, pepper and the lemon juice.Spread 1/2 tbsp of garlic on each then top with a couple slices each of tomato, pepper and onion. Fold the foil up into pouches.Bake for 20 minutes or until cooked through. Let sit to cool the foil for 5 minutes before unwrapping.Enjoy!Serving Size:?Makes 4 servings
