You will need:
4- 4 oz. Tilapia fillets
2- lemons (peeled and sliced)
1/2 onion -sliced (I prefer red onion for this recipe)
3 tb olive oil
1 tsp. ground thyme
coarse salt & pepper

1 cup dry quinoa
2 large heads of brocolli (or any other vegetable of your choice)

Aluminum foil


How Do I Make Lemon and Thyme Baked Tilapia?

Here is how you make Lemon and Thyme Baked Tilapia:

Place the 1 cup quinoa in a pot with 2 cups water and bring to a boil. Cover, set to low and cook for 20 minutes (just like rice).Cook brocolli or prefered vegetable.For the Tilapia:Preheat oven to 350*Cut 4 pieces of aluminum foil large enough to wrap tilapia in.In a small bowl mix sliced onion, olive oil, thyme, sliced lemons, and coarse salt & pepper to taste.Layer half of the olive oil mixture evenly onto each foil sheet, followed by the tilapia and top with the remaining half mixture making sure everyone got some lemon and onions.Fold the foil over sealing the edges so the juices stay in the foil packets. Place the foils in a large baking dish and cook for 20 minutes or until Tilapia is done. When it is ready, carefully unfold foil packets and transfer the tilapia and onions to plates discarding the lemons.
