3 garlic cloves, minced
1 red bell pepper, diced
3 medium yellow summer squash, halved, then sliced
1 tsp salt
1/2 tsp pepper
28 oz can diced tomatoes with juice

Here is how you make Baked Cod with Summer Squash:

Preheat oven to 400. In small bowl, stir together bread crumbs, Parmesan, rosemary, and 1 1/2 tbsp of oil. Set aside.In large ovenproof skillet, heat remaining oil over medium heat. Add onion and garlic and stirfry until onion is tender.Stir in bell pepper, yellow squash, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Cook until pepper is crisp-tender, about 5 minutes. Stir in tomatoes and 1/4 teaspoon of salt. Bring to a boil and cook about 7 minutes until lightly thickened.Place cod on vegetables and sprinkle with 1/4 tsp of pepper and salt. Top with bread crumb mixture. Bake uncovered for about 20 minutes or until cod is cooked through and bread crumbs lightly browned.
