2 Fillets of fresh or frozen salmon (apx 6 oz each)
1/4 C basil pesto (or more to taste, but will change the calorie count)
3-4 tomatoes, sliced about 1/4" thick
aluminum foil

Here is how you make Foil Baked Salmons with Basil Pesto and Tomatoes:

Prepare a separate foil package for each 2 pieces of salmon) Tear two pieces of foil large enough to wrap around the salmon sith some overlap. Place those foil pieces one on top of the other. Put about 1 tsp of basil pesto on the foil and then place the salmon filet on top. Spread each piece of salmon with anothe 1 tsp of basil pesto. Arrange sliced tomatoes over the pest so they cover the top of the salmon. Wrap salmon securely in foil (doubling over the seam and ends several times). Place salmon packets on a heated baking sheet and cook 15 minutes. Remove from over after 15 minutes and let sit 2-3 minutes.
