Preheat oven to 450 degrees.On top of the heavy duty aluminum foil, lay cod fillets. (You will be making a 'packet' from the foil, so be sure that there is enough foil to wrap over the top and come up around the sides.)Rub olive oil and garlic on the fillets. Sprinkle with salt and ground pepper. Put grated vegetables on top of the fish and wrap each fillet into a packet.Bake for 20-25 minutes, checking at 15 for doneness. When fish is done, it will flake easily with a fork. Unwrap each packet and serve.
