Recipe adapted from a food network recipe, they use vermouth and thyme. I didn't have either so I adapted it to work with what I had. Very tasty dish. Would be great with chicken broth as well.

Here is how you make Baked Mahi Mahi with wine and herbs:

Preheat oven to 450 degreesLine baking dish with parsley sprigs, bay leaves and smashed garlic. Season mahi mahi to taste with salt and pepper lay on top of herbs. Drizzle 1 Tbsp olive oil over fish and pour wine into dish. Cover loosely with foil.Bake 15 minutes or until fish is flaked easily with fork.Drain liquid from baking dish into a small sauce pan. Bring sauce to a simmer, reduce liquid by half. About 5 mins. Add lemon juice and 1 Tbsp of olive oil, season with salt and pepper if needed.
