Take 1 cup dried pinto beans and pour them out on your table. Pick through them and take out any bean that looks bad, is a different color, the skin is wrinkled, or is broken, and of course the little rocks :-) This will just take a few minutes.2. Put the beans in a colander and rinse them thoroughly.3. Place beans in a stock pot and cover with 4 cups water and a bay leaf. Cover and bring to a boil. Reduce heat a bit and continue boiling for 2 hours. Keep adding water as it cooks away. Stir now and then and keep the water level at least an inch above the beans. If you can, have some water heating in a pan on the stove so that you can add hot water to the beans. If you add cold water it will slow down the cooking process.4. After 2 hours, the beans should be soft and dark brown. If not, continue to cook for another half hour.5. Add 1 tsp salt (don't add any salt before the beans are soft or else they will never get soft), a diced tomato, and 3 cloves of garlic (roasted is better if you have it).6. Bring the beans to a boil and lower heat to low.7. Cook on a slow boil for 1 to 1 1/2 hours. Stir now and then to keep them from sticking.8. After 1 - 1 1/2 hours all the beans will want to do is stick. Turn off the heat, take out the bay leaf and mash them.
