Soak black eyed peas for 5 minutes and crush in a blender. Wash off the peeling or charfs of the peas until you get the core of the white peas. Dispose of the charfs. Soak the peas core overnight or for at least 12 hours. Drain off the water and blend the peas carefully with very little water added. In a bowl use a cake mixer and aerate the peas paste thoroughly. Slice leeks into small pieces and add to the paste. Add bouillon cubes to taste. Deep fry in hot corn oil and blot off the excess oil before serving.
