Here is how you make Breaded Halibut:

Cut halibut into 2" chunks. Pat dry with paper towel. Dredge with flour, then dip in beaten egg, followed by the panko bread crumbs. Place dipped pieces on a rack to dry for a bit. 15 minutes before serving time, Pour about 1/4 in extra light olive oil in the frying pan and heat till fairly warm. It shouldn't be too hot. Add the halibut and cook until golden on both sides.Season to taste.
