With a large chef knife chop the fish using quick even straight up and down motions until you have a mass of 1/4 inch pieces. Transfer to large bowl and gently stir in all ingredients except olive oil. Be careful not too overmix. Divide mixture into four patties 1 inch thick. Chill in refrigerator at least 20 min or up too 2 hours before cooking.Heat oil in large nonstick skillet over medium heat.
