Bring a large pot of water to a simmer, and place the salmon in it for 3 or 4 minutes, until cooked. Drain and cool. Break into chunks.2. In a frying pan over low heat, combine the olive oil, onion, and thyme. Saute until the onion is translucent, about 5 minutes. Add the red pepper, and cook for 1 more minute. Cool.3. In a large bowl combine the salmon, onion mixture and remaining ingredients, except the bread crumbs for coating.4. Preheat oven to 450 degrees. Put half of the remaining bread crumbs in an 13" x 9" x 2" baking dish, lightly sprayed with cooking oil. Press the salmon cake mixture into the dish, then top with the remaining bread crumbs.
