8-10 oz medium shrimp (peeled & deveined)
2 Tbsp of FF cream cheese
2 cups 1% low fat milk
1/2 cup bread crumbs
10oz pasta (I use rotini, but mini penne is good too)
5 oz baby spinach (stems removed)
1/2 cup white wine
1/4 cup all purpose flour
1.5 Tbsp olive oil
1.5 cup chopped onion ( i like large pieces)
1.5 cup sliced mushrooms
1/4 cup Kraft Parmesan cheese (grated)
4 cloves minced garlic
1 tsp lemon juice

Here is how you make Shrimp and Spinach Pasta Casserole:

Yields 6 servingsPreheat oven to 350.Cook pasta to package directions stopping one minute prior to being "done" removing from heat.Add spinach to the pasta water for two minutes.Drain thoroughly. set aside.In a large skillet over med. heat saute onions, mushrooms, and shrimp in olive oil. Add garlic. Stir in flour and mix through out.Slowly add milk and wine. Add creme cheese and parmesan cheese. Continue to stir constantly until it starts to boil.Remove from heat and mix with pasta and spinach thoroughly. Add to a 13 x 9 casserole dish sprayed with Pam. Top with bread crumbs.
