My grandma used to just leave them in.Then mix up the eggs and milk. Tear up the bread into big bread crumbs. Mix the salmon, eggs, bread, cheese, lemon juice and milk in a casserole dish.Crumble the crackers (Ritz or Club or chips or skip this part) on top to make a topping. Bake in oven uncovered for about 30 minutes. Adjust cheese, eggs, bread, etc. as needed to get a consistency you like. Goes nice mixed up with rice on the side.The family version has a sauce to go on it also -- (not low calorie!) made of equal parts mayo and ketchup plus a dash or Worcestershire and dash of lemon juices -- mix up in sauce pan over low heat (my mom mixes it cold sometimes but the heat is nice to get all the mayo lumps to go away).Serving size is a total guess. Fits in a standard casserole dish (2 quart?) I have no idea.
