* 3 cloves garlic, minced
* Cilantro, raw, 3 tbsp (to taste)
* Hot Pepper, 0.25 cup, chopped or diced
* Limes, juice from 8
* 1/2 Red Ripe Tomatoes, diced
* 1 Sweet Red Pepper, chopped
* Ginger Ale, 2 fl oz (remove)

You can use other white fish if marlin is not available, although it is a great consistency for ceviche. Another popular fish is corvina.


How Do I Make Costa Rican Ceviche?

Here is how you make Costa Rican Ceviche:

1. Mince/Chop the onion, garlic, tomato, cilantro, hot pepper, red pepper, and tomato (omit seeds and juice from tomato) and put in NON plastic bowl. MIX WELL2. Juice the limes3. Cut the fish into 1/2 inch pieces.4. Mix the fish in with the rest of the ingredients5. Cover with lime juice and ginger ale.6. Mix well so all the fish is covered with liquid.7. Refrigerate for a few hours, mixing the ceviche every 30 - 45 minutes.8.
