.5 Tbsp Olive Oil
1 medium onion, diced
2 medium carrots, diced
1 10-oz pkg frozen chopped broccoli (3 cups)
6 oz dry whole-wheat pasta (1.5 cups)
4 large eggs
3/4 cup low-fat milk
1.5 cups shredded mozzarella cheese (5 oz)
Salt and pepper to taste


How Do I Make Penne and Cheese Pie?

Here is how you make Penne and Cheese Pie:

1) Coat a 1.5 qrt round deep dish pie pan or round casserole dish with cooking spray. Sprinkle with 2 tablespoons breadcrumbs, tilting pan to coat evenly.2) Place frozen broccoli in colander. Cook pasta according to package directions. Drain pasta over the broccoli to thaw it. Drain both well and set aside.3) Saute onion and carrots in oil.4) Whisk the eggs, milk, salt & pepper together in a mixing bowl. Add cheese, vegetables and pasta and mix well. Pour into pan spreading evenly. Sprinkle with remaining breadcrumbs. Spray top with butter spray or oil.* Pie can be covered and refrigerated at this point for up to 2 days. Bring to room temperture before baking.5) Bake uncovered at 350 degrees until filling is set, about 45 minutes. Cool slightly.
