2 ounces smoked salmon, chopped
3 ounces goat cheese, crumbled
4 large eggs
1 cup skim milk
1/2 cup half and half
1 tsp dried dill
1 tsp lemon zest
salt to taste
black pepper to taste

Here is how you make Smoked Salmon, Dill and Goat Cheese Mini Quiches:

Preheat oven to 350 degrees.Heat butter in a small skillet over medium heat. Add the onion, a pinch of salt, and cook until translucent (3-5 minutes). Add garlic and cook one additional minute. Remove from heat and reserve. In a medium bowl, whisk together eggs, milk,half and half dill, lemon zest and black pepper. Mix onion and garlic mixture into eggs.Spray muffin pan with cooking spray. Put one layer down of half the smoked salmon and goat cheese into each muffin tin evenly. Pour half of the egg mixture over the salmon and goat cheese in the muffin tins. Layer down the remaining salmon and goat cheese, and pour the remaining egg mixture over it. Bake mini quiches for 20 minutes.
