4 oz smoked salmon, chopped
4 oz goat cheese, crumbled
2 eggs
1/4 cup all whites egg substitute
1 cup skim milk
1/2 cup fat free half and half
2 tsp dried dill
1 tsp lemon zest
1/4 tsp black pepper

Here is how you make Smoked Salmon, Dill + Goat Cheese Quiche:

Heat oven to 350 degrees. Place pie crust in 9-inch glass pie pan as directed on box for one-crust filled pie.Heat oil in a small skillet on medium heat. Add the shallots or white onion and cook until translucent, a couple minutes, remove from heat. Whisk eggs and egg whites substitute in a medium bowl, whisk in milk, half and half, dill, lemon zest, and black pepper.Line the bottom of the quiche crust with cooked shallots. Put one layer down of half the smoked salmon and goat cheese. Pour half of the egg mixture over the salmon and goat cheese in the quiche shell. Layer down the remaining salmon and goat cheese, and pour the remaining egg mixture over it. Transfer to oven. Bake at 350 degrees until just set in the center, about 30 to 35 minutes.
