Bring a large pot of water to boil, then add rotini & mushrooms. When it comes back to a boil, warm olive oil in a medium sized sauce pan. Add grated onion & garlic, and gently saute. DO NOT ALLOW TO BROWN!!! Add flour. Whisk. Whisk in milk, a bit at a time. Add cheeses, a bit at a time, stirring constantly. Drain pasta & mushrooms and pour into a large serving bowl.
