8 cups spinach
1/2 tsp salt divided
1 1/3 cups fat free milk
1cup egg substitute
1/4 tsp black pepper
1/8 tsp red pepper
dash paprika
12 ounces French bread, cut into cubes
3/4 cup drained crumbled firm tofu (water packed)
1 cup shredded fontina cheese

Here is how you make Caramelized Onion, Spinach and Fontina Cheese Strata:

Heat a large nonstick skillet (sprayed with cooking spray) over medium heat. Add onions and cook for about 12 minutes, stirring frequently, until browned. Add spinach, cook 5 minutes until wilted. Stir in salt. Cool. Combine remaining ingredients through bread and stir to coat. Place half of bread in bottom of prepared (cooking spray) 11 x 7 baking dish, layer with tofu, half of spinach mixture,1/2 cup of cheese, remaining bread mixture, remaining spinach mixture and cheese. Cover with foil coated with cooking spray and refrigerate overnight or 8 hours. Let sit for 10 minutes before baking. Preheat oven to 350.
