1 tablespoon feta cheese, crumbled
1/4 cup panko crumbs

Here is how you make Sole Stuffed with Spinach and Feta Cheese:

1) Preheat oven to 400 degrees.2) Heat 1 teaspoon olive oil in a nonstick skillet over medium-high heat. In batches, cook spinach until wilted and no excess liquid remains. Set spinach aside.3) In a small baking, add the remaining 1 teaspoon olive oil. Rub one side of sole fillet on the baking dish, smearing olive on the bottom side of the fish.4) Mix feta and spinach together.5) On the top side of the fillet, squeeze lemon wedge over the fillet. Then put spinach mixture on top of the fillet in the middle of the fish.
