Heat oven to 350 degress.Spray large skillet with cooking spray add mushrooms and garlic and cook 5 minutes stirring frequently.Remove from heat.Beat egg whites lightly, add mushroom/garlic mixture, ricotta cheese, and half of the mozzarella and parmesan cheese. Mix well and spoon into manicotti shells.Place in a greased 9 by 13 baking dish, cover with spaghetti sauce.Bake 40 minutes or until heated through.
