Chop chicken into bite sized pieces and brown in large skillet. Fry onion and peppers in skillet w/meat drippings til soft. Add Ro-Tel to skillet. Add rice package. Add about 2 cups of water. Stir well to get spices mixed. Add 2 tsp of green tabasco. Cover and reduce heat. Simmer for 20 or 30 minutes.
