In saucepan, heat oil over Medium-High heat; cook onion for 3 minutes or until softened. Add scallops, cook for 2 minutes, stirring frequently. Stir in potatoes and stock. Bring to a boil, reduce heat and simmer for 12 to 14 minutes or until potatoes are tender.Sir in cream. Season to taste with salt (opt) and pepper.
