1. Preheat oven to 350 degrees. Sprinkle 1 1/4 lb cod fillets with salt and pepper; place in 11x7x2 inch glass baking dish. Drizzle with 1 1/2 tsp. lime juice. Heat 1 Tbsp olive oil in large skillet over medium heat. Add 1 1/2 cup chopped leek (white and pale green parts only; about 1 large) and 2 garlic cloves, minced; saute 7 minutes.
