Here is how you make Kel's Corn Fritters:

Place the egg into a mixing bowl. Drain the liquid from the can of corn. Put 3 tbsps of corn liquid in with the egg, and keep the rest aside in case you need to thin the batter later. Tip the drained corn into the bowl, add the scallions, the Worcestershire sauce and then add the flour (as well as the salt & ground black pepper). Stir with a fork, just until the mixture is just dampened. Drop teaspoonfuls of this fritter batter into a pan which has been sprayed with a good amount of the olive oil.Turn the fritters as soon as they are golden-brown on the bottom. Lift them from the pan as soon as the second side is cooked through.Keep them warm on a plate until all mixture/fritters are cooked.So yummy with salsa & a green salad on the side.Great for a weekend brunch.
