Here is how you make Eggplant Creole:

Heat olive oil in a deep skillet, add eggplant, onions, garlic and seasoning and saute until onions are clear and eggplant is slightly browned. Add marinara, beef broth, and uncooked rice. Stir to blend. Add water, cover skillet and simmer for 15 minutes. Transfer to a casserole dish and add more water to allow rice to cook. Cover and bake at 400 degrees until rice is tender.
