1 medium raw onion

Here is how you make Bill's Cod Fish to Die For:

1. Coat a good-sized sauce pan with butter and let simmer.2. Chop onion medium-fine and dump them in the simmering butter, with the garlic.3. Place the cod fillets in the pan & baste with the butter mixture already in the pan, keeping mixture under the fillets. Cover the pan but be careful to not let it burn. After the cod is cooked, remove from the flame.4. Chop spinach medium-fine and place spinach in another pan of boiling water and cook it for a few minutes.5. Coat another sauce pan with butter and let simmer, then place chopped spinach in i.6. Break up the American cheese into small pieces, then make a sauce out of the chese, two eggs, and bread crumbs, stirring with a wisk. Pour onto the cooked spinach. Move the sauce mix around onthe spinach, but don't flip it like a pancake. Slide a big wooden spoon under it to keep it from sticking until it all melts together.7. Place the cod on a plate with a serving of the spinach pancake, and maybe a couple pieces of tomato.6.
