Halibut fillets cooking spray How Do I Make Caribbean Halibut and Fruit Salsa?Here is how you make Caribbean Halibut and Fruit Salsa: Preheat oven to 350 degrees. Combine first 3 ingredients in a food processor, and process until minced. Add the mango, pineapple, juices, thyme, oil and salt. Puree until smooth. Place mixture and fish in a container and marinate in refrigerator for at least 20 minutes. Remove fish from bag, reserving marinade. Pour reserved marinade into a small saucepan and bring to a boil. Reduce heat and simmer 5 minutes. Remove from heat. Place fish on a grill rack or broiler pan coated with cooking spray. Cook for 10 minutes per inch of thickness of fish or until fish flakes easily when tested with a fork. Serve with the reserved fruit salsa. Serve with a side of quinoa and veggies of choice.
