Rinse millet. Drain and heat until mostly dry. Add almonds and 3tbs of olive oil. Add boiling water and simmer 30 minutes. Turn off heat and leave to rest 5 minutes. Fluff with fork and set aside.Heat skillet over med heat. Add 2tbsp of olive oil. Add shallots and cook till browned. Add chard and sorrel until wilted. Add wine and stock and bring to boil.
