In sauce pan heat oil until hot, but not smoking. Add garlic and 3 tbs of grated ginger. Cook over moderately high heat until the garlic turns golden, 2 to 3 minutes. Pour wine into pan and bring to a simmer. Cook until reduced to 8 fl. oz. About 8 minutes. Add the scallops in a single layer. Be careful not to overcook.
