Here is how you make Grilled Squid Santorini:

Clean squid and spray with olive oil cooking spray, Salt and pepper to taste. Grill squid til just opaque. DO NOT OVERCOOK. I use a cast iron grill skillet and it comes out just fine.In a saucepan, heat olive oil over medium high heat. Add onion and garlic and sautee til translucent. Add arugula and let wilt.Add tomatoes, spices, salt and pepper. let simmer for 10 minutes.
