1. Clean Mussels2. Heat half the oil in a large pan and fry the spring onion and garlic for 2-3 minutes until softened. Add mussels and wine and cook over a high heat, covered, and shaking the pan for 2-3 minutes until the mussels have opened. 3. Discard any mussels that remain closed. Drain the remaining mussels, keeping the cooking juice. DIscard the tops of the mussels. If necessary, reduce the cooking juices down to 3 tbsp by cooking on high heat.4. Mix the breadcrumbs, lemon rind, parsley, parmesan and the reserved cooking juices together with salt and pepper to taste.5. Preheat the grill to high.
