Trim off tough end or leaks and then slice lengthwise (approximately 1/4 inch width slices), then rinse to make sure you have all the dirt and sand removed.2. Peel and julienne carrots (1/4 inch width), rinse.3. Pat dry both leeks and carrots and set aside.4. Heat olive oil in large skillet with lid.5. Carefully place both the leeks and carrots into skillet and saute until the leeks are starting to become soft (3 - 5 minutes).6. Pour white wine over the vegetables and bring to soft boil.7. Place the halibut filet over the vegetables, salt & pepper to taste, then place lid on skillet and allow the fish to gently cook for 10 - 12 minutes. (check at the half way mark to ensure you do not over-cook the halibut).6 - 3 oz. servings.This is a great meal served with a salad and baked potato or just served over pasta or rice.
