What Are The Ingredients For Vegetarian Lasagna Recipe?The ingredients for Vegetarian Lasagna are: SAUCE2 T extra virgin olive oil 2-3 large cloves garlic 1 C diced onion 2-3 T fresh parsley 16 oz tomato sauce 32 oz diced tomatoes 1/4 t black pepper 1 t kosher salt 1 t white sugar 2-3 T fresh basil Layers 9 whole wheat lasagna noodles, uncooked 2 packs frozen chopped spinach (20 oz) 1 large egg beaten 2 C part skim ricotta 1/4 C parmesan cheese 4 oz shredded part skim mozzarella How Do I Make Vegetarian Lasagna?Here is how you make Vegetarian Lasagna: In a large pot gently saute the onion, garlic and parsley in the olive oil until the onions are transparent and the garlic is light gold. Add the rest of the ingredients to the pot. Bring to a boil and immediately reduce heat to a simmer. Simmer sauce about 20 uncovered.In the meantime, defrost the 2 packs of spinach in the microwave and drain thoroughly. In a large bowl beat the egg and add the ricotta and parmesan and mix this cheese/egg mixture well.When the sauce is done, put enough sauce in a 9x13 pan to coat the bottom. Set 5 uncooked lasagna noodles on the bottom. ( I set 4 across the long side of the pan and one (broken) on the short side.) Taking a tablespoon put dollops of spinach on top of the noodles. Try to spread it out so that there is a pretty even distribution. Next, put dollops of the cheese/egg mixture on top of the spinach. With the back of a large spoon, gently press down on the cheese/egg mixture so that this layer too is evenly spread. Sprinkly the mozzarella over the cheese/egg layer. Then set the remaining four noodles over the mozzarella. Pour the remaining sauce over the noodles. Cover tightly with aluminum foil and bake for 40 minutes ina preheated 400 degree oven.Remove from oven and let it sit 10-15 minutes.
