Combine calamari, olive oil, garlic, lemon zest, black and red pepper. Reserving 2 tsp of lemon juice, pour the rest in with the calamari mixture. Marinate 15-30 minutes.Heat grill to medium, covering grates with tinfoil if they are widely spaced.Bring wine, butter, remaining lemon juice, and capers to a boil and remove from heat.Cook calamari 3-5 minutes until they start to shrink and puff up.
