Place salmon skin side down in center of foil. Lie out slices of lemon and onion until entire salmon is covered. Sprinkle with parsley. Pour olive oil over the top.Fold foil into a packet, making sure not to tear it and there are no gaps in any of the seams. It's always better to have too much foil than not enough. Place packet on baking sheet because most of the time, the packet fails during cooking and this saves a big smelly mess in the oven.Bake at 425°F for about 45 minutes until fish flakes easily with fork.
