How Do I Make Mediterranean Mahi Mahi?

Here is how you make Mediterranean Mahi Mahi:

Preheat oven to 425 degrees. Saute onion and garlic in 1 tablespoon olive oil until softened, about 5-6 minutes. Add 1 cup chopped stewed tomatoes. Cook for additional 5 minutes. Add wine, olives, lemon juice and additional seasoning to taste. Reduce heat, blend in parmesan cheese and cook until sauce is reduced to a thicker consistency. Place mahi mahi fillets in shallow dish and cover with sauce. Bake for 12-14 minutes or until fish flakes easily with a fork.
